1. Prepare the Bananas

Peel the bananas and cut them into thick slices so they blend more easily. Use very ripe bananas with brown spots for the best natural sweetness and texture.
These 2-Ingredient Flourless Banana Pancakes are made with only ripe bananas and egg whites. The batter comes together in seconds in a blender and cooks into soft, naturally sweet pancakes without flour or added sugar. Serve them with Greek yogurt, cream, fresh fruit or blueberry compote for a quick and easy breakfast.

Crack the eggs one at a time. Separate the yolks and collect only the egg whites in a clean bowl. Avoid allowing any yolk to mix with the whites.
Place the sliced bananas in the blender. Pour the egg whites over the bananas.
Blend for approximately 30–45 seconds, or until the bananas are completely smooth and the mixture looks slightly frothy.
Heat a non-stick frying pan over medium-low heat. Lightly coat the surface with butter or oil. Wipe away any excess with paper towel, leaving only a thin layer.
Pour a small ladleful of batter into the centre of the pan. Keep each pancake approximately 8–10 centimetres wide so it is easier to flip.
Cook over medium-low heat for approximately 2 minutes, until small bubbles appear on the surface and the edges begin to set.
Slide a thin, wide spatula completely underneath the pancake. Turn it over in one careful movement and cook the second side for approximately 1 minute.
Lightly grease the pan again only when necessary. Continue cooking the remaining batter in small portions.
Arrange the cooked pancakes in a stack on a serving plate. Spoon the Greek yogurt or thick cream over the top.
Drizzle the blueberry compote over the pancakes. Finish with fresh blueberries and serve immediately.
