1. Prepare the Bananas

Peel the bananas. Carefully insert a wooden ice-pop stick into the bottom of each banana. Push the stick slowly through the centre to prevent the banana from splitting.

Arrange the bananas on a tray lined with parchment paper. Freeze for at least 2 hours so they remain firm while being coated.
Pour the roasted peanuts onto a large, shallow plate. Lightly crush some of the peanuts for a more even coating, but leave plenty of larger pieces for extra crunch.
Transfer the peanut butter to a deep bowl. When necessary, warm it in the microwave for 10–15 seconds or briefly over a bain-marie until it becomes easier to dip.
Dip each frozen banana into the peanut butter. Use a spoon to cover any exposed areas and allow the excess peanut butter to drip back into the bowl.
Place each peanut butter-coated banana onto the plate of roasted peanuts. Turn and gently press the banana into the peanuts until every side is evenly covered.
Return the coated bananas to the parchment-lined tray. Freeze for 20–30 minutes, or until the peanut butter layer is firm.
Break the chocolate into small pieces and place it in a heatproof bowl. Add the coconut oil. Melt in short microwave intervals or over a bain-marie, stirring until completely smooth.
Dip each peanut-coated banana into the melted chocolate. Spoon chocolate over any uncovered areas and allow the excess to drip off for several seconds.
Place the chocolate-coated bananas back onto the parchment paper. Freeze for at least 20 minutes, or until the chocolate shell is completely firm.
Leave the frozen banana pops at room temperature for 3–5 minutes before eating. Serve while the chocolate shell is crisp and the banana centre is slightly softened.
