1. Prepare the Avocado

Cut the avocado in half and remove the stone. Peel the avocado and cut the flesh into thin, even slices.
Avocado Halloumi Toasts combine crisp pan-toasted bread with golden halloumi cheese, creamy avocado and fresh cherry tomatoes. The salty grilled cheese balances the smooth avocado, while black sesame seeds add extra texture. Ready in only 20 minutes, these easy halloumi toasts are ideal for breakfast, brunch and quick lunches.
Cut the avocado in half and remove the stone. Peel the avocado and cut the flesh into thin, even slices.
Drizzle the avocado slices with lemon juice. This balances the rich flavour and helps prevent the avocado from browning too quickly.
Heat a non-stick or cast-iron frying pan over medium heat. Add the bread and toast each side for approximately 1–2 minutes, until golden and crisp.
Transfer the toasted bread to a serving plate. Do not stack the slices, as trapped steam can make them soft.
Cut the halloumi into six pieces approximately 1 cm thick. Pat the surface dry with paper towels to remove excess moisture.
Add the olive oil to the hot pan. Cook the halloumi over medium heat for approximately 1–2 minutes on each side, until golden brown.
Arrange three pieces of cooked halloumi on each slice of toasted bread.
Place the sliced avocado over the halloumi, slightly overlapping the slices to create an even layer.
Cut the cherry tomatoes in half. Arrange them around the avocado or along the edges of each toast.
Sprinkle with black sesame seeds and a small amount of black pepper. Taste before adding any salt, as halloumi is naturally salty.
Arrange sliced strawberries and blueberries around the toasts when using.
Serve while the halloumi is warm and the bread is still crisp.
