Method

1. Preheat the Oven

1

Step 1

Preheat the oven to 200°C and line a baking tray with parchment paper.

2. Cut the Sweet Potato

2

Step 2

Wash and dry the sweet potato thoroughly. Cut it in half lengthwise.

3. Score the Surface

3

Step 3

Use a knife to make shallow crosshatch cuts across the exposed flesh. Avoid cutting through the skin.

4. Season the Sweet Potato

4

Step 4

Brush the cut surfaces with olive oil. Sprinkle evenly with salt, black pepper, paprika and dried oregano.

5. Begin Roasting

5

Step 5

Place the sweet potato halves on the tray with the cut sides facing down. Roast in the preheated oven for approximately 25 minutes.

6. Flip and Finish Roasting

6

Step 6

Carefully turn the sweet potato halves over. Continue roasting for another 10–15 minutes, or until the flesh is completely tender when pierced with a fork.

7. Cook the Beef

7

Step 7

While the sweet potato is roasting, heat the olive oil in a large frying pan over medium-high heat. Add the beef and break it into small pieces with a spatula.

8. Season the Beef

8

Step 8

Add the salt, paprika, cumin, garlic powder and black pepper. Cook for approximately 7–8 minutes, until the beef is fully cooked and lightly browned.

9. Prepare the Vegetables

9

Step 9

Dice the tomato into small pieces. Finely chop the red onion. Cut the avocado in half, remove the stone and slice the flesh thinly.

10. Make the Yogurt Sauce

10

Step 10

Combine the Greek yogurt, lemon juice, crushed garlic, water, salt and black pepper in a small bowl. Stir until smooth and pourable.

11. Mash the Sweet Potato

11

Step 11

Transfer the roasted sweet potato halves to a large serving bowl. Use a fork to gently mash and loosen the flesh without breaking the skins.

12. Add the Cheese

12

Step 12

Sprinkle the shredded mozzarella or cheddar over the hot sweet potato. The heat from the potato will begin to soften and melt the cheese.

13. Add the Beef

13

Step 13

Spoon the seasoned beef evenly over the cheese layer.

14. Add the Fresh Toppings

14

Step 14

Scatter the diced tomato and red onion over the beef. Arrange the avocado slices neatly in the centre or along one side of the bowl.

15. Finish with the Sauce

15

Step 15

Drizzle the yogurt sauce over all the ingredients. Serve immediately while the sweet potato and beef are still warm.
