1. Boil the Potatoes

Peel the potatoes and cut them into evenly sized cubes. Add them to a large pot of salted boiling water and cook for 15–20 minutes, or until completely tender when pierced with a fork.

Heat the olive oil in a large oven-safe pan over medium-high heat. Add the mini meatballs and cook for 6–8 minutes, turning regularly, until browned on the outside.

Transfer the browned meatballs to a separate bowl using a slotted spoon. Leave the oil and browned flavourful pieces in the pan.

4. Cook the Tomatoes

Arrange the whole tomatoes in the same pan. Season with oregano, paprika, salt and black pepper. Cover and cook over medium heat for approximately 8–10 minutes, until the tomato skins begin to split and the flesh softens.

5. Add the Vegetables

Finely dice the red onion and bell pepper. Thinly slice the green chilli and finely chop the garlic. Add all the vegetables to the softened tomatoes.

Cover the pan again and cook for another 6–8 minutes. The onion and peppers should soften while the tomatoes release their juices.

7. Crush the Tomatoes

Use a potato masher or wooden spoon to crush the softened tomatoes directly in the pan. Stir until the tomatoes and vegetables form a thick, slightly chunky sauce.

8. Return the Meatballs

Add the browned meatballs back to the pan. Stir until they are evenly coated in the tomato sauce and simmer over low heat for approximately 5 minutes. Remove the pan from the heat.

Drain the cooked potatoes thoroughly and transfer them to a large mixing bowl. Add the butter and warm milk or cream. Mash until smooth and creamy.
