Ingredients

Method

1. Slice the Onion

1

Step 1

Cut an even slice approximately 5–7 millimetres thick from the middle of the red onion. Carefully separate the individual onion rings.

2. Prepare the Flower Pieces

2

Step 2

Reserve one medium onion ring for the centre of the flower. Cut one of the larger rings into six equal curved pieces to create the petals.

3. Separate One Egg

3

Step 3

Carefully separate the white and yolk of one egg. Keep the yolk intact in a small bowl for later.

4. Whisk the Remaining Eggs

4

Step 4

Crack the remaining two eggs into a separate bowl. Add the salt and black pepper, then whisk until completely combined.

5. Prepare the Pan

5

Step 5

Heat a non-stick frying pan over medium-low heat. Add the olive oil or butter and spread it evenly across the surface.

6. Create the Onion Flower

6

Step 6

Place the reserved round onion ring in the centre of the pan. Arrange the six curved onion pieces around it with the open sides facing outward to form a flower.

7. Fill the Petals with Egg White

7

Step 7

Slowly pour the reserved egg white inside the onion petals. Try to keep most of the egg white within the flower shape.

8. Add the Whisked Eggs

8

Step 8

Slowly pour the whisked eggs around the outside of the onion flower. Allow the eggs to cover the base of the pan while keeping the central onion ring empty.

9. Cook the Omelette

9

Step 9

Cook over medium-low heat for approximately 4–5 minutes. The outer omelette should begin to set and the egg white inside the petals should turn opaque.

10. Add the Egg Yolk

10

Step 10

Carefully place the reserved egg yolk inside the onion ring at the centre of the flower.

11. Finish Cooking

11

Step 11

Cover the pan and cook over low heat for another 1–2 minutes. The egg whites should be fully cooked while the centre yolk may remain slightly soft, depending on your preference.

12. Serve

12

Step 12

Carefully transfer the omelette to a serving plate using a wide spatula. Sprinkle with black sesame seeds and serve immediately.
